For really delicious mince pies with an extra kick of super-festive cranberries, these just can't be beaten.

Ingredients

You can freeze these pies after you've made them (before cooking) and cook them the day you need them. Alternatively, cook them first, freeze them, then reheat then when you want to serve them.

  • Zest of half an orange
  • 375g pack ready-made sweet pastry
  • 350g (10oz) jar of mincemeat
  • 10tsp cranberry sauce
  • Icing sugar, for sprinkling
  • 6.5cm (2¾in) plain pastry cutter
  • 2 x 12-hole bun tray

Method

  1. Set the oven to moderately hot, 190°C (375°F, gas mark 5). Knead the orange zest lightly into the pastry and roll it out on a lightly-floured surface. Cut out rounds using the cutter and reserve the trimmings.
  2. Spoon a good tsp of mincemeat into each pie, then top with ½ tsp of cranberry sauce. Knead the rest of the pastry, roll it out again and cut it into thin strips. Arrange these in a cross on top of the pies, pressing into the pastry case to seal well.
  3. Bake for about 25 mins until golden. Cool in the tin for a couple of minutes, then remove and place on a wire rack. Sprinkle with icing sugar. Serve warm or cold.
