Panettone is a sweet Italian Christmas bread full of raisins and other dried fruits. It's perfect as an alternative to traditional bread and butter pudding

Ingredients

You can find Panettone in most large supermarkets or at your local deli. This recipe is not suitable for freezing.

  • About 125g (4oz) butter, softened
  • About 350g (12oz) panettone, sliced
  • 175g (6oz) sultanas
  • 125g (4oz) demerara sugar
  • Zest of 1 lemon
  • ½ level teaspoon ground mixed spice
  • 300ml (½ pint) milk
  • 284ml carton double cream
  • 2 medium eggs
  • Ovenproof dish, buttered

Method

  1. Set the oven to moderate, 180°C (350°F, gas mark 4). Spread the butter over one side of each slice of panettone and cut each slice into triangles. Mix together the sultanas, demerara sugar, lemon zest and mixed spice. Arrange half of the panettone, butter-side up, in the ovenproof dish and sprinkle over half of the fruit mixture. Top with remaining panettone and scatter the remaining fruit mixture over the top.
  2. Beat together the milk, cream and eggs and then pour the mixture through a sieve over the panettone. Leave the pudding to stand for at least 30 mins so that the panettone absorbs some of the liquid.
  3. Place the dish on a baking tray, and bake in oven for 40-50 mins, until the top is golden, the edges of the panettone start to crisp, and the custard has set in the centre. Remove from oven and serve immediately.
