If you're struggling to get your children to eat their five portions of fruit and veg a day, these tempting, fun fruit jellies are a healthy dessert idea that's sure to appeal.

Ingredients

You can use most fresh fruits in these jellies, so try chopped peaches or nectarines, red and blackcurrants or chopped orange segments. Avoid kiwi fruit and pineapple, though, as they contain an enzyme which prevents the jelly from setting. For a grown-up version, use elderflower cordial or lightly sweetened rosé wine.

  • 600ml (1pt) fresh orange juice
  • 11.7g sachet gelatine (vegetarians can use Vege-Gel.)
  • 50g (2oz) blueberries
  • 75g (3oz) small strawberries, hulled and quartered
  • 50g (2oz) raspberries

Method

  1. Place 5tbsp of the orange juice in a small heatproof bowl and sprinkle over the gelatine or follow Vege-Gel pack instructions. Leave to stand for 2-3 mins, then microwave on High for 1 min until dissolved or sit the bowl in a larger bowl of hot water and stir gently until dissolved. Cool for 10 mins.
  2. Pour the rest of the orange juice into a jug and stir in the cooled gelatine mixture. Leave in a cool place for about 20 mins.
  3. Divide the fruit between 4 serving glasses or bowls. Pour over the orange juice and chill in the fridge for 2 hrs until set. Serve immediately.
