A crunchy, fresh-tasting salad makes a great contrast to all the spicy flavours in the main dish. Use the best-quality tomatoes you can find.

Ingredients

  • 3 vine-ripened tomatoes
  • 1/4 small cucumber, peeled and cut into chunks
  • 6 radishes, halved
  • 2tbsp each chopped fresh parsley and coriander
  • 2tbsp olive oil
  • Juice of 1/2 lemon
  • 1 garlic clove, crushed

Method

  1. Using a sharp knife, cut small crosses at the base of each tomato and place in a bowl. Pour over boiling water and leave for 1 min, then hold under cold water and slip off the skins.
  2. Halve the tomatoes, then remove the seeds with a spoon and cut into large chunks.
  3. In a serving bowl, toss the tomatoes with the remaining ingredients and serve.
