Brussels Sprouts with Caraway Seeds

Brussels sprouts are good for you, so why not try this spiced up version which includes the sweet but tangy taste of caraway seeds.

Ingredients

  • 500g (1lb 2oz) brussels sprouts, trimmed
  • 40g (1 1/2oz) unsalted butter
  • 2tsp caraway seeds
  • 60ml (2 1/4 fl oz) dry vermouth, such as Noilly Prat

Method

  1. Cook sprouts in salted boiling water for 3 mins. Drain and refresh in a bowl of iced water. Drain, cover and chill.
  2. Melt butter in a pan. Add seeds and let them colour for 1 min before stirring in sprouts.
  3. Up the heat and add vermouth. Cook, stirring, on a high heat for 1 min.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.
