Brussel sprouts with apple and juniper

The apple and juniper berries compliment the flavour of sprouts and turn them into a very tasty vegetable dish. Try serving these sprouts as a deliciously fruity accompaniment to your roast turkey.

Ingredients

  • 250ml (8 floz) apple juice
  • 1 Cox's apple
  • 1tbsp juniper berries
  • 500g (18oz) brussels sprouts
  • Salt and freshly ground black pepper

Method

  1. Prepare the brussels sprouts and cut a cross in each. Cut the apple into quarters, remove the core and slice thinly.
  2. Pour the apple juice into a pan and bring to the boil. Add the sprouts and the sliced apple. Crush the juniper berries, add to the pan and season.
  3. Simmer gently, uncovered for 5-6 mins, or until the sprouts are tender. Serve straight away.
