New potato bistro salad

Ingredients
- 500g new potatoes
- 350g fine green beans, trimmed
- 2tbsp extra-virgin olive oil
- 1tbsp lemon juice
- 1tsp Dijon mustard
- 50g baby spinach or salad leaves
- 2 red radishes, thinly sliced
- 2 tbsp chopped spring onions
Method
- Boil potatoes for 15-20 minutes, until tender. Remove with a slotted spoon, refresh in cold water, drain and set aside to cool. Meanwhile boil the green beans for 2-3 minutes. Drain, refresh in cold water and drain again. Set aside.
- Shake olive oil, lemon juice and mustard together in a screw-top jar.
- In a large bowl, combine the beans, potatoes, radishes, spinach and spring onions. Toss with the dressing when ready to serve.
