New potato bistro salad

Ingredients

  • 500g new potatoes
  • 350g fine green beans, trimmed
  • 2tbsp extra-virgin olive oil
  • 1tbsp lemon juice
  • 1tsp Dijon mustard
  • 50g baby spinach or salad leaves
  • 2 red radishes, thinly sliced
  • 2 tbsp chopped spring onions

Method

  1. Boil potatoes for 15-20 minutes, until tender. Remove with a slotted spoon, refresh in cold water, drain and set aside to cool. Meanwhile boil the green beans for 2-3 minutes. Drain, refresh in cold water and drain again. Set aside.
  2. Shake olive oil, lemon juice and mustard together in a screw-top jar.
  3. In a large bowl, combine the beans, potatoes, radishes, spinach and spring onions. Toss with the dressing when ready to serve.
