Ingredients

  • 2 large baking potatoes
  • 75g dolcelatte cheese
  • 2 shredded spring onions
  • 1tbsp creme fraiche
  • 50g sunblush tomatoes, roughly chopped
  • 1 garlic clove, crushed
  • 1tbsp chopped parsley
  • Salt and pepper

Method

  1. Prick potatoes all over, cook in the microwave for 10 minutes or until soft.
  2. Cut open and gently scoop the insides into a bowl. Add 50g cheese, spring onions, creme fraiche, season and mix well. Scoop mix back into potato skins.
  3. Mix garlic, tomatoes and parsley. Sprinkle on top of potatoes with the rest of the cheese and pop under the grill for 1-2 minutes, take out and serve.
