Ingredients

Sweet potatoes can be cooked in the same way as potatoes and are therefore really versatile. Try roasting, boiling, baking or even microwaving them for equally delicious results.

  • 4 large sweet potatoes, scrubbed
  • 3tbsp of olive oil
  • 3tbsp of Cajun seasoning
  • 200mls (7 floz) tzatziki to serve

Method

  1. Preheat oven to 220°C/425°F/gas 7. Slice each sweet potato in half lengthways then each half into 3 to make fat wedges
  2. Mix the oil and Cajun seasoning in a small bowl. Brush the mixture over the flesh of the sweet potatoes.
  3. Transfer the sweet potatoes to a non-stick roasting tin and bake for 15-20 mins.
  4. Serve with tzatziki.
