The combination of chewy mozzarella and super-sweet Peppadew peppers makes this quick meal taste absolutely divine

Ingredients

Peppadews are small, slightly spicy sweet peppers, which can be bought in a jar from supermarkets. Look out for the spicier variety if you like more of a kick.

  • 2 ciabatta loaves, split in half and then halved again
  • 120g pot fresh green pesto
  • 400g (14oz) mozzarella cheese
  • 115g (4oz) sweet Peppadew peppers, halved (See Top tip below)
  • 300g (10½ oz) cherry tomatoes, halved
  • 115g (4oz) pitted black olives, halved
  • 8tbsp torn fresh basil leaves
  • Crisp green salad, to serve

Method

  1. Preheat the grill to medium heat. Place the ciabatta halves on the grill pan and spread with the pesto. Top evenly with the mozzarella, peppers, cherry tomatoes and black olives.
  2. Place under the grill and cook for 8-10 mins or until the cheese is melted and turning golden brown. Scatter with the basil and serve with a crisp green salad.
