The delicate aniseed flavour of fennel goes perfectly with salmon - while soy sauce and sesame seeds add an Oriental flavour

Ingredients

Having a summer party? This is a great dish to cook on the barbecue.

  • 4 small fennel bulbs, trimmed and quartered
  • 4 salmon fillets
  • 4tsp toasted sesame oil
  • 4tsp light soy sauce
  • 2tsp sesame seeds

Method

  1. Preheat the oven to 200°C (400°F, gas mark 6).
  2. Cook the fennel in boiling, salted water for 3-4 mins until just tender then drain.
  3. Place each salmon fillet on a large sheet of foil. Top with 4 fennel quarters. Drizzle 1tsp each of oil and soy sauce and sprinkle ½ tsp sesame seeds over each fillet.
  4. Fold up the foil into a parcel, leaving a little gap at the top. Repeat to make four parcels. Place on a baking tray and roast for 15-20 mins until the salmon is cooked throughout.
