Luxury coffee and walnut cake

Ingredients
If three layers sounds a bit too ambitious, you can make this cake in two instead.
- 175g (6oz) butter, softened175g (6oz) caster sugar
- 3 large eggs, beaten
- 175g (6oz) self-raising flour
- 55g (2oz) chopped walnuts
- 2tbsp very strong coffee (use either liquid coffee, or make an espresso strength coffee and use 2tbsp of it)
For the icing:
- 175g (6oz) butter, softened
- 350g (12oz) icing sugar, sifted
- 2-3tbsp very strong coffee
- Walnut halves to decorate
Deep 18cm (7in) round cake tin
Method
- Preheat the oven to 180ºC, 350ºF or gas 4). Grease and line a deep, round cake tin.
- Cream together the butter and sugar until pale and fluffy. Gradually beat in the eggs. Sift the flour and add a little to the cake mixture. Then fold in the remaining flour, together with the walnuts and coffee. Spoon into the prepared tin and level the surface.
- Bake in the oven for 1 hour or until well risen and spongy to the touch. Leave to cool in the cake tin for 5 mins, then turn out on to a wire rack.
- For the icing, put the butter in a bowl and cream until soft. Gradually beat in the icing sugar, then the coffee. Cut the cake horizontally into three. Use two-thirds of the icing to sandwich it together. Set on a plate. Spoon the rest of the icing over the top. Decorate with walnuts.

This is a fab recipe for parties etc. i realli enjoyed making it and the coffee wasn't a issue. My friends though i purchased it but i told them about this great website...they were realli chuffed.

Thank you for clarifying the coffee issue! The cake was indeed ok with the granules. I think it would be better to add liquid as the granules weren't able to dissolve, which meant I could clearly see them and they were slightly bitter, although not unpleasant. I'm looking forward to making it again but properly! :-)

Hi Emma, thanks for your comment. It wasn't totally clear what we meant with the coffee so we've added some more notes to the recipe. You need to make a strong espresso-style coffee and then use 2tbsp of this. The granules should have worked though. Let us know how you got on :)

This recipe is slightly ambiguous when it comes to the coffee. I've just put 2tbsp of coffee granules in the mixture and for some reason it doesn't seem right. I wonder whether it means 2tbsp of liquid coffee? My cake is baking at the moment, so the proof will be when it's ready!

I couldn't believe my eyes when this coffee and walnut cake turned out to be a SUCCESS! It tasted delicous and soooooo easy to make;)....come on people get ure ingredients and make this FAB CAKE!!!
