We know what it's like when you're browsing a site with as many recipes as ours. You find a brilliant recipe, want to make it again, but can't remember how you found it!

But we've solved the problem. Now, by clicking 'Save this recipe' or 'I cooked this' on any of our recipes, they'll be saved and grouped into your personal online recipe book. This super-tasty light lunch is ready in just five minutes - which gives you more time to enjoy the flavours

Ingredients

  • 2 slices ciabatta bread
  • 1 garlic clove, peeled
  • 2 ripe plum tomatoes, halved, deseeded and diced
  • 1tbsp extra virgin
  • Olive oil
  • Fresh coriander or basil leaves

For a more substantial meal, layer some fresh mozzarella on the bread before adding the tomatoes.

Method

  1. Toast the bread in a toaster or under a grill or on a griddle on both sides. Rub garlic on both sides.
  2. Place the tomatoes on top of the bread, drizzle with the oil and season well. Scatter with fresh coriander or basil leaves and serve.
