One of our favourite bruschetta recipes just also happens to be a classic. But then, isn't it the way that sometimes the simplest of recipes turn out to be your all time favourites?
Learn how to make classic bruschetta with our quick and easy recipe. It really does take only 5 minutes to make this delicious bruschetta. Each piece of crispy bread is loaded with fresh plum tomatoes, infused with garlic and garnished with basil. Give your bruschetta starter an extra twist by adding a sprinkle or two of cheese; goat's cheese or mozzarella works best. Bruschetta is best made and eaten on the same day to make sure the ingredients are as fresh as possible. You can prep the topping ahead of time so all you have to do on the day of serving is load each piece of ciabatta bread with a generous helping of tomato mix. A portion of this bruschetta works out at only 134 calories per serving.
Ingredients
- 2 slices ciabatta bread
- 1 garlic clove, peeled
- 2 ripe plum tomatoes, halved, deseeded and diced
- 1tbsp extra virgin
- Olive oil
- Fresh coriander or basil leaves

Method
- Toast the bread in a toaster or under a grill or on a griddle on both sides. Rub garlic on both sides.
- Place the tomatoes on top of the bread, drizzle with the oil and season well. Scatter with fresh coriander or basil leaves and serve.
Top Tip for making Bruschetta
For a more substantial meal, layer some fresh mozzarella on the bread before adding the tomatoes.
