Ingredients

Don't fancy aubergines? This recipe tastes great with courgettes or mushrooms, too.

  • 350g (12oz) spiral pasta shapes
  • 3tbsp olive oil
  • 2 aubergines, cubed
  • 350g jar tomato and olive pasta sauce
  • 250g (9oz) mozzarella, chopped
  • Bunch fresh basil leaves

Method

  1. Cook the pasta according to the packet instructions. Saving a good splash of the cooking water, drain the pasta and set aside.
  2. Heat the oil in a large non-stick frying pan, add the aubergine and cook over a medium heat for 5-10 mins or until tender.
  3. Add the pasta sauce and warm through gently. Add the pasta and the reserved cooking water. Season and stir well, then mix in the mozzarella. Heat through for 1 min. Spoon the pasta into warmed bowls and top with the fresh basil.
