Ingredients

Supermarkets now sell excellent cake decorations. Look for them near the marzipan and ready-to-roll fondant icing.

  • 125g (4½ oz) plain flour
  • 1tsp baking powder
  • 125g (4½ oz) unsalted butter
  • 125g (4½ oz) caster sugar
  • 2 eggs, beaten
  • 85g (3oz) strawberry jam

For the icing:

  • 350g (12oz) icing sugar, sifted
  • Fresh lemon juice
  • Edible food colouring
  • Edible cake decorations (such as flowers, ladybirds or silver balls)

Method

  1. Put 14-16 paper cases into bun tins. Sift together the flour and baking powder and set aside. Preheat the oven to 180°C (350°F, gas mark 4).
  2. Cream the butter and sugar until pale and light in a mixing bowl. Gradually beat in the eggs, followed by the jam. Slowly beat in the flour mixture until smooth.
  3. Spoon into the paper cases and bake for about 20 mins or until golden. Turn out
  4. on to a wire rack and leave to cool.
  5. Tip the icing sugar into a bowl and add enough fresh lemon juice to make a thick icing. Add colouring if you like and spoon the icing over the little cakes. Arrange edible decorations on top.

    Hi i have made these twice now with my daughter but both times they dont rise high enough they are quite flat and look sunk in the middle.. Please help as i dont no what i am doing wrong as i am following the ingrediants and instructions down to a T.. My daughter really wants these cakes to be baked for her birthday party but i dont no where am going wrong when baking them... PLZZZZZZZZZ HELPPPPPPPP.. xx

    yeah, i find that the lemon juice works just as well as lemon flavorings. i ussually get the flavorings but lemon juice is cheaper and tastes nicer.
