Adding ginger to ready-made teriyaki marinade adds a real kick to this deliciously simple salmon dish

Ingredients

Teriyaki marinade is a sweet soy sauce: you can buy it ready-made from most large supermarkets.

  • 6tbsp teriyaki marinade
  • 2.5cm (1in) fresh ginger, grated
  • 4 x 150g (5½ oz) salmon fillets
  • 250g packet basmati rice
  • 2tbsp toasted sesame seeds
  • Small handful coriander, roughly chopped
  • 1 lime, cut into four segments

Method

  1. Mix the teriyaki marinade and ginger in a shallow ovenproof dish. Add the salmon and coat in the marinade. Leave for 15 mins. Meanwhile, cook the rice according to the pack instructions.
  2. Remove the salmon from the marinade and grill for 6-8 mins or until just cooked. Scatter over the sesame seeds and coriander.
  3. Serve straight away with the rice, lime segments and green beans.
