Cod tomatoes and green beans

Juicy tomatoes and crunchy green beans are the perfect accompaniment to a succulent cod fillet. Delicious!

Ingredients

If you have time, soak green beans in cold water for two hours before cooking. Most beans are picked long before they reach the shops, and the soaking rehydrates them.

  • 55g (2oz) green beans, topped and tailed
  • 2 x 375g (13oz cod) fillets
  • 8 cherry tomatoes on the vine
  • 2tsp olive oil

Method

  1. Preheat the oven to 200°C (400°F, gas mark 6), and put a saucepan of water on to boil.
  2. Add the beans to the boiling water, and when it comes back to the boil, remove the beans and refresh under cold running water.
  3. Place the beans on a baking tray and top with the cod and tomatoes, drizzle with the olive oil and 2tbsp water and season. Bake for 10-15 mins.
