Soy sauce, ginger and honey ensure this delicious Quorn and vegetable stir-fry has a really tasty kick

Ingredients

This dish is best served hot and fresh - so leave it until the last minute to throw it together.

  • 350g (12oz) Quorn
  • 5tbsp soy sauce
  • 1tbsp minced ginger
  • 2tbsp olive oil
  • 600g mixed stir-fry vegetables
  • 3tsp runny honey
  • Toasted sesame seeds and chopped fresh chives, to garnish

Method

  1. Toss together the Quorn, soy sauce and ginger. Season well. Heat the oil in a wok over a high heat, then add the Quorn mixture and stir-fry for 5 mins.
  2. Add the vegetables and stir-fry for 3 mins. Drizzle over the honey, stir-fry for a further 1 min, then season to taste.
  3. Serve scattered with the toasted seasame seeds and chopped fresh chives.
