This may sound an unusual mix of ingredients - but it works together beautifully in this lush, flavoursome salad

Ingredients

Don't fancy Stilton? Other crumbly cheeses, such as feta, will taste just as lovely.

  • 115g (4oz) Stilton cheese
  • 8 slices Black Forest ham
  • 2 nectarines
  • 2 handfuls fully prepared wild rocket
  • 25g (1oz) flaked almonds, toasted
  • Juice of ½ lime
  • 2-3tbsp olive oil
  • Fresh crusty bread, to serve

Method

  1. Remove the rind from the Stilton and crumble it. Cut the slices of ham in half. Halve, stone and slice the nectarines.
  2. Arrange the cheese, ham, nectarines, wild rocket and flaked almonds on two plates.
  3. Whisk together the lime juice and olive oil. Pour the dressing over the salad, season with freshly ground black pepper and serve with fresh crusty bread.
