Ingredients

Can't get hold of fresh peaches? Use tinned ones: they still count towards your five-a-day.

  • 250g packet puff pastry
  • 100ml (3½ fl oz) low-fat thick yogurt
  • 25g (1oz) caster sugar
  • 142ml pot double cream, lightly whipped
  • 4 small ripe peaches, halved and stoned
  • 2tbsp icing sugar

Method

  1. Preheat the oven to 220°C (425°F, gas mark 7). Roll out the puff pastry and cut into 16 squares measuring 6cm x 6cm (2½ in x 2½ in) each. Put on a baking sheet and bake for 15-20 mins or until golden. Allow to cool.
  2. Beat together the yogurt and sugar, then stir in the double cream. Spoon the mixture on to eight of the squares and top each with a peach half. Place a square of pastry on top and dust with the icing sugar.
