Chocolate silk
This irresistible recipe is so called because the chocolate melts in your mouth like silk. Enough said!

Ingredients
Want an excuse to eat more chocolate? Dark choc that's at least 70% cocoa solids is one of the most antioxidant-rich foods in the world. Enjoy!
For the base:
- 100g (4oz) pecan nuts175g (6oz) hazelnuts
- 100g (4oz) soft dark brown sugar
- ¼ tsp ground cinnamon
- ¼ tsp ground mixed spice
- 100g (4oz) butter, melted
For the mousse:
- 550g (1lb 4oz) dark chocolate, minimum 70% cocoa solids
- 175g (6oz) unsalted butter
- 100g (4oz) caster sugar
- 6 large eggs, beaten
- ½ tsp vanilla extract
- 2tbsp dark rum or brandy
- 200g (7oz) crème fraîche
You will need:
- 25.5cm (10in) spring-form tin
Method
- Preheat oven to 180°C (350°F, gas mark 4). Roast the nuts until browned. Let them cool, then grind coarsely in a food processor. Transfer to a bowl and stir in the other ingredients for the base. Mix well; press into the base of the tin. Allow to chill while you make the mousse.
- Break up the chocolate and melt in a heatproof bowl over a pan of simmering water, stirring occasionally. It is important that the chocolate remains warm when you add it to the butter mixture.
- Place the butter and sugar in a bowl or mixer and whisk well for 5 mins. Gradually add the beaten eggs: don't worry if the mixture looks curdled at this stage. Add the melted chocolate, vanilla extract, rum or brandy and stir until thoroughly combined. Finally, stir in the crème fraîche and pour over the base. Chill for 6 hours or overnight. Cut into thin slices and serve with extra crème fraîche.
