If you've never tried cannellini beans, this quick and easy recipe is the perfect introduction. It works as a light lunch or side dish

Ingredients

This can be made with wilted spinach in place of the pak choi. You can also replace the cannellini beans with butter beans.

  • 410g can cannellini beans, drained
  • 4-5tbsp olive oil
  • 2-3tbsp lemon juice
  • 1 garlic clove, peeled and crushed
  • 2 packs pak choi, washed and cut in half from tip to root
  • Salt and freshly ground black pepper

Method

  1. Place the cannellini beans in a pan with 3tbsp olive oil, lemon juice and garlic. Heat through and lightly mash until the beans start to break up. Season and cover.
  2. Heat the remaining olive oil in a wok or frying pan over a medium heat. Add the pak choi and stir-fry for 2-3 mins.
  3. Pile the mashed beans on to four plates, top with the pak choi and drizzle with a little olive oil and a squeeze of lemon juice before serving.
