Serves: 4
Ingredients
This can be made with wilted spinach in place of the pak choi. You can also replace the cannellini beans with butter beans.
- 410g can cannellini beans, drained
- 4-5tbsp olive oil
- 2-3tbsp lemon juice
- 1 garlic clove, peeled and crushed
- 2 packs pak choi, washed and cut in half from tip to root
- Salt and freshly ground black pepper
Method
- Place the cannellini beans in a pan with 3tbsp olive oil, lemon juice and garlic. Heat through and lightly mash until the beans start to break up. Season and cover.
- Heat the remaining olive oil in a wok or frying pan over a medium heat. Add the pak choi and stir-fry for 2-3 mins.
- Pile the mashed beans on to four plates, top with the pak choi and drizzle with a little olive oil and a squeeze of lemon juice before serving.
