Purple sprouting broccoli in lemon pasta

This dish is full of spring flavours, while broccolli also contains lots of cancer-fighting and anti-aging agents.

Ingredients

You should be able to find purple sprouting broccoli at your supermarket, but you can also use traditional broccoli for this recipe.

  • 150g (5oz) penne pasta
  • 200g (7oz) purple sprouting broccoli cut into 5cm pieces
  • 1tbsp olive oil
  • 2 cloves garlic, chopped
  • Zest and juice of ½ lemon
  • 2tbsp white wine
  • 100ml (3.4 floz) double cream
  • Salt and black pepper

Method

  1. Bring a large pan of seasoned water to a rolling boil. Add the pasta and boil for 10 mins or according to pack instructions. Drain and return to the pan.
  2. Bring another small pan of water to the boil, add the broccoli and simmer for 2 mins. Drain and add to the pasta.
  3. Heat the olive oil in a frying pan. Add the garlic and lemon zest and cook for 1 min until soft, but not coloured. Add the white wine and lemon juice and reduce by half. Stir in the cream and seasoning and bring to the boil.
  4. Add the cream mixture to the broccoli and pasta and toss until well mixed. Serve with a generous sprinkling of black pepper.
