If you thought bubble and squeak was only for leftovers, think again with this tasty take on the traditional recipe

Ingredients

For a vegetarian option, replace the spicy sausage with a tin of kidney beans and use 1tbsp oil to fry the leeks.

  • 800g (1¾ lb) floury potatoes, diced
  • 200g (7oz) kale, shredded
  • 225g (8oz) pack spicy sausage, diced
  • 275g (10oz) leeks, sliced

Method

  1. Boil the potatoes and kale for 10-12 mins until tender, then drain.
  2. Meanwhile, fry the chorizo and leeks for 7-8 mins. Add the potatoes and kale and fry for 1-2 mins. Crush lightly with a potato masher and season to taste.
