This recipe couldn't be simpler, but the curry paste gives the prawns a real oriental kick.

Ingredients

The curry is equally delicious served with jasmine rice.

  • 2tbsp olive oil
  • 800g (1lb 12oz) raw tiger prawns with shells on
  • ½ - 1½ tsp Thai red curry paste, according to taste
  • 2tbsp freshly chopped coriander

Method

  1. Heat the oil in a wok (or large frying pan), add the prawns and red curry paste, and stir-fry in batches until the prawns have turned from grey to pink and are cooked through.
  2. Scatter with coriander and serve with mini toasts or noodles and lime wedges.
