This recipe couldn't be simpler, but the curry paste gives the prawns a real oriental kick.

Ingredients
The curry is equally delicious served with jasmine rice.
- 2tbsp olive oil
- 800g (1lb 12oz) raw tiger prawns with shells on
- ½ - 1½ tsp Thai red curry paste, according to taste
- 2tbsp freshly chopped coriander
Method
- Heat the oil in a wok (or large frying pan), add the prawns and red curry paste, and stir-fry in batches until the prawns have turned from grey to pink and are cooked through.
- Scatter with coriander and serve with mini toasts or noodles and lime wedges.
