Ingredients

For a different flavour, you can always substitute the jumbo prawns in this recipe with strips of pork fillet or skinless boneless chicken if you wish.

  • 300g (10oz) uncooked peeled jumbo prawns
  • 1tsp sesame oil
  • 1 clove garlic, finely chopped
  • 1 bulb stem ginger, finely chopped
  • 2 spring onions, trimmed and finely chopped
  • ½ red chilli, deseeded and finely chopped
  • 160g jar sweet and sour sauce
  • Freshly chopped coriander, to garnish
  • Boiled rice noodles, to serve

Method

  1. Rinse the jumbo prawns and remove the black vein if necessary.
  2. Heat the sesame oil in a wok (or non-stick frying pan) and stir-fry the prawns until they turn from grey to pink.
  3. Add the garlic, stem ginger and spring onions and stir-fry for a couple of minutes. Add the red chilli and stir-fry for a further minute. Finally, add the sweet and sour sauce and cook for a couple of minutes until the mixture is bubbling. Scatter with the chopped coriander and serve at once with boiled rice noodles.
