Sungold tomato, spinach and feta salad

This deliciously tangy salad makes a quick and easy light lunch or a side dish to accompany chicken.

Ingredients

You can replace the dressing with a herb-flavoured dressing of your choice.Try adding crispy bacon bits for extra flavour and texture.

  • 25g (1oz) pine nuts
  • 100g (4oz) baby leaf spinach, washed and drained
  • 200g (7oz) feta cheese, cubed
  • 100g (4oz) Sungold tomatoes, halved
  • 1tbsp olive oil
  • 1tbsp sherry vinegar

Method

  1. Dry fry the pine nuts for 1-2 mins until lightly golden.
  2. Place the spinach in a bowl with the feta cheese, tomatoes and pine nuts if using.
  3. Sprinkle with the sherry vinegar and drizzle with the olive oil. Season and toss gently to combine. Serve with crispy baguette.
