Sungold tomato, spinach and feta salad

This deliciously tangy salad makes a quick and easy light lunch or a side dish to accompany chicken.
Ingredients
You can replace the dressing with a herb-flavoured dressing of your choice.Try adding crispy bacon bits for extra flavour and texture.
- 25g (1oz) pine nuts
- 100g (4oz) baby leaf spinach, washed and drained
- 200g (7oz) feta cheese, cubed
- 100g (4oz) Sungold tomatoes, halved
- 1tbsp olive oil
- 1tbsp sherry vinegar
Method
- Dry fry the pine nuts for 1-2 mins until lightly golden.
- Place the spinach in a bowl with the feta cheese, tomatoes and pine nuts if using.
- Sprinkle with the sherry vinegar and drizzle with the olive oil. Season and toss gently to combine. Serve with crispy baguette.
