This apple and rhubarb crumble serves six and requires only eight ingredients. 

The combination of sweet apples, tart rhubarb and our crunchy crumble topping is so simple but satisfying. In only 15 minutes this humble dessert is prepared and ready for the oven. Serve with vanilla custard or ice cream if you like. 

Ingredients

  • 600g (1lb 5oz) rhubarb, sliced into 5cm (2in) lengths
  • 450g (1lb) Bramley apples, cored, peeled and cut into thick wedges
  • 150g (5oz) golden caster sugar
  • 25g (1oz) butter, cubed
  • 50g (2oz) plain flour
  • 100g (4oz) luxury muesli
  • 50g (2oz) light muscovado sugar
  • pinch of cinnamon

Method

  1. Heat the oven to 220C (200C, Gas 7). Put the rhubarb, apples and caster sugar in a large roasting tin and roast for 20 minutes until softened and lightly charred.
  2. Put the butter and flour in a food processor and whizz until the mixture resembles fine breadcrumbs. Mix in the muesli, muscovado sugar and a pinch of ground cinnamon.
  3. Spoon the cooked fruit into a baking dish and scatter over the crumble mixture. Bake for 15-20 minutes until golden and crisp.

Top tips for making this apple and rhubarb crumble

An easy way to add even more crunch to your crumble is to add some chopped nuts to the topping. Pecans or walnuts work especially well with the flavour of apple and rhubarb. 

What spices go with rhubarb?

Cinnamon is a popular spice to use in crumbles and pairs very well with rhubarb. You could also use ground ginger or a little star anise for a warming, aromatic flavour.

What fruit goes best with rhubarb?

Because of the sharp flavour of rhubarb it pairs nicely with fruits that are on the sweeter spectrum. Apples such as pink lady or jazz are a great match but ripe strawberries and raspberries work nicely too. Orange zest and juice is also sometimes mixed with rhubarb in desserts and brings a wonderful zingy flavour.

What is the secret to good crumble?

Food writer Jessica Ransom says: ‘Using fruit that is in season always helps to deliver the maximum flavour and satisfaction in a dessert like a crumble. There are so few ingredients, you really want each element to shine. I also like to make my crumble topping vary in texture so I like to add nuts, seeds and oats to the mix so that big clumps of crunchy goodness form!’
