Turn cold sausages, salad greens and a can of beans into a quick, filling meal in minutes. Great with crusty bread.

Ingredients

You can use any variety of cooked sausage for this quick salad. Children will love chopped cocktail sausages, or try diced chorizo sausage for a more adult taste.

  • 8 hotdog sausages
  • 2 x 400g can mixed beans
  • 200g cucumber, diced
  • 1 red onion, peeled and thinly sliced
  • 90ml (6tbsp) ready made French dressing
  • A few salad leaves
  • Crusty bread

Method

  1. Cook the hotdogs according to the packet instructions. Let them cool and then slice each sausage diagonally.
  2. Drain the mixed beans and rinse well. Place in a bowl and add the sliced hotdogs. Add the red onion and the cucumber.
  3. Pour over all the French dressing and add a few salad leaves. Toss gently to mix. Divide between two serving bowls and serve with warmed crusty bread.
