Ingredients

  • 100g (4 oz) plain chocolate (70% cocoa solids)
  • 50g (2oz) unsalted butter
  • 225ml (8fl oz) golden syrup
  • 100g (4oz) granulated sugar
  • 2 large eggs, beaten
  • 150g (5oz) sweet shortcrust pastry
  • 100g (4oz) pecan halves
  • Crème fraiche, to serve

  • 20cm (8in) fluted loose-bottomed flat tin, oiled
  • Baking beans

Method

  1. Preheat the oven to 200°C (400°F/gas mark 6). Melt the chocolate and butter in a bowl over a pan of simmering water. Place the golden syrups and the sugar in a saucepan and melt over a gentle heat until the sugar has dissolved, then increase the heat and boil for 3 mins, stirring constantly. Allow to cool for 10 mins. Place the eggs in a large bowl and pour on the melted chocolate, then whisk in the syrup and sugar mixture.
  2. Roll out the pastry as thinly as possible and use to line the tart tin. Prick it all over with a fork and chill in the fridge for 10 mins to firm it. Line the tin with greaseproof paper and fill with a layer of baking beans. Bake for 10 mins. Remove the paper and beans and return to the oven for 5 more mins so that the base is lightly browned.
  3. Reduce heat to 180°C (350°F, gas mark 4). Pour the filling into the tart shell and bake for 15 mins, then remove the tart and arrange pecans on top, before returning to the oven and cooking for 25-30 mins, or until the filling is just set but with a slight wobble. Allow to cool for at least 30 mins in the tin before serving.
