Bacon and tomato rarebit
This simple but satisfying dish is perfect for breakfast or a lazy brunch - even with brown ale!

Ingredients
Cheshire cheese also works very well in this recipe. Add a little paprika and Worcestershire sauce to give your rarebit a spicy kick.
- 8 rashers lean back bacon
- 4 thick slices cut from small farmhouse loaf
- Butter or margarine for spreading
- 2 large tomatoes, thickly sliced
- 225g (8oz) mature Cheddar cheese, grated
- 60ml (4tbsp) brown ale or milk
- 10ml (2tsp) Dijon mustard
- Parsley, to garnish
Method
- Cook the bacon rashers under a medium preheated grill for 2-3 mins on each side until crisp. Set aside. Lightly toast one side of the bread slices, and then butter the other side and top with sliced tomatoes and bacon rashers.
- Mix together the grated cheese, ale or milk and mustard and season with freshly ground black pepper. Spoon this mixture thickly over the bacon rashers.
- Cook under a hot grill for 1-2 mins until the cheese mixture is golden and bubbling. Serve garnished with parsley.
