This elegant dessert is a perfect showcase for the sharp flavours of pear and raspberry

Ingredients

This meringue is perfect served with natural fromage frais or Greek yogurt.

  • 4 large firm pears
  • 25g (1oz) light muscovado sugar
  • 50ml (2fl oz) fresh orange juice
  • 100g (4oz) frozen raspberries
  • 2 egg whites
  • (4oz) caster sugar

Method

  1. Peel, core and slice the pears. Place in a large frying pan with the muscovado sugar and orange juice. Cover and cook gently for 10-15 mins until tender.
  2. Stir in the raspberries and spoon the mixture into a shallow ovenproof dish.
  3. Preheat the oven to 190°C (375°F, gas mark 5).
  4. In a large bowl, whisk the egg whites until stiff, then gradually whisk in the caster sugar to make a firm and glossy meringue. Spoon the meringue over the fruit to cover completely.
  5. Bake in the oven for 8-10 mins until light golden.
