Fruit fool is made by mixing pureéd fruit with cream or custard and leaving it to chill. Simple - but delicious!

Ingredients

If you're a stickler for tradition, you could use gooseberries in this fruit fool instead.

  • 400g (14oz) very ripe strawberries
  • 150g (5½ oz) very ripe soft raspberries
  • 425g can custard
  • 284ml carton whipping cream
  • 4 mini meringues

Method

  1. Holding back just a few for decoration, whizz the rest of the berries in a blender or food processor to make a purée. Add the custard, cream and mini meringues and whizz again until smooth.
  2. Pour into a rigid plastic container and freeze until firm. Beat the mixture and refreeze. Repeat.
  3. Serve with the reserved strawberries and raspberries.
