Turkey doesn't always take hours to cook: this deliciously creamy meal is ready in just 10 minutes. Perfect!

Ingredients

Watching your weight? Use a cream substitute such as Elmlea instead of double cream.

  • 300ml (½ pt) turkey or chicken stock
  • 4 skinless British turkey breast escalopes, cut into 1-2cm (½ - 1in) strips
  • 1 large leek, rinsed and finely chopped
  • 300ml (½ pt) double cream
  • 1 tbsp wholegrain mustard
  • 1 tbsp parsley, chopped
  • 225g (8oz) frozen peas, cooked
  • Salt and freshly ground black pepper

Method

  1. Pour the stock into a saucepan and bring to the boil. Add the turkey strips, turn
  2. down the heat and simmer for 5 mins.
  3. Lift out the turkey pieces and keep warm, then bring the stock back to a rapid
  4. boil until reduced by two thirds.
  5. Meanwhile, cook the leek in a pan of boiling salted water for 3-4 mins, or until just tender. Drain well and keep warm.
  6. Add the cream, mustard, parsley and peas to the reduced stock. Then stir in
  7. the cooked turkey and leeks and heat gently to warm through.
  8. Season well with salt and pepper and serve straight away in bowls, with boiled potatoes.
