King prawns and mangos turn a simple noodle salad into an indulgent - but inexpensive - treat. Delicious!

Ingredients

If you can't find a ripe mango, tinned ones will do just as well.

  • 250g packet medium rice noodles
  • 250g (8oz) cooked king prawns
  • ¼ cucumber, cut into thin ribbons
  • 1 large ripe mango, peeled and diced
  • 60ml (4tbsp) sunflower oil
  • Juice from 1 large lime
  • 15ml (1tbsp) soy sauce
  • 5ml (1tsp) grated root ginger
  • 10ml (2tsp) sweet chilli sauce
  • 30ml (2tbsp) fresh chopped coriander
  • 5ml (1tsp) dried chilli flakes

Method

  1. Cook the noodles according to the packet instructions, then drain well and rinse under cold running water. Place in a large bowl and add the prawns, cucumber ribbons and diced mango.
  2. Whisk together the oil, lime juice, soy sauce, ginger and chilli sauce and season with salt and freshly ground black pepper. Pour over the noodles and toss well to mix. Add the coriander and chilli flakes and chill for at least 30 mins before serving.
