These tasty beef wraps are very quick to prepare - the perfect hearty lunch for a busy, busy day

Ingredients

Choose thick pieces of sirloin steak and allow to stand at room temperature for at least 30 mins before cooking.

  • 10ml (2tsp) coarsely ground black pepper
  • 2 sirloin steaks (see tip)
  • 10ml (2tsp) oil
  • 1 ripe avocado
  • 30ml (2tbsp) soured cream
  • 8 small flour tortillas or wraps
  • ¼ cucumber, cut into thin sticks
  • 1 red pepper, deseeded and cut into strips
  • 50g (2oz) mixed salad leaves

Method

  1. Press the pepper into the steaks. Heat the oil in a heavy-based frying pan and fry the steaks for 3-4 mins on each side. Remove from the pan and leave to stand for 5 mins.
  2. Peel and remove the stone from the avocado. Mash half the flesh with the soured cream. Spread a little of the avocado cream on each of the tortillas. Slice the rest of the avocado.
  3. Thinly slice the steaks. Fill the tortillas with the steak slices, cucumber, pepper, sliced avocado and salad leaves, and roll up. Serve immediately.
