This recipe is as straightforward as it sounds and can be done entirely in the microwave, which cuts down on washing-up. Brilliant!

Ingredients

Most pasta can be cooked in the microwave - but do check the packet instructions first.

  • 3 x 220g pkts microwave pasta
  • 500g (1lb 2oz) cooked, skinless, boneless chicken breasts, chopped
  • 225g bag spinach leaves, washed
  • 8 cherry tomatoes, halved
  • 2tbsp pine nuts
  • 1tbsp olive oil

Method

  1. Put the pasta, chopped chicken and 3tbsp water into a large bowl and microwave on high for 3 mins.
  2. Stir in the spinach, tomatoes and pine nuts, then microwave for a further 2 mins or until the spinach has wilted.
  3. Season well with salt and freshly ground black pepper and drizzle with olive oil.
