This lovely lamb salad is given a Mediterranean twist with a sprinkling of feta cheese. Delicious!

Ingredients

When buying lamb steaks, look out for the leanest cuts with firm, creamy-white fat.

  • 4 lamb leg steaks
  • 10ml (2tsp) dried oregano
  • 1 large cos lettuce, washed and chopped
  • 12 small tomatoes, quartered
  • ½ cucumber, peeled and cut into chunks
  • 200g packet feta cheese, drained and crumbled

For the dressing:

  • 75ml (5tbsp) olive oil
  • 30ml (2tbsp) red wine vinegar
  • 10ml (2tsp) fresh chopped oregano or 5ml (1tsp) dried oregano
  • Pinch of sugar

Method

  1. Season the lamb steaks with freshly ground black pepper and sprinkle over the dried oregano. Heat a cast-iron skillet or griddle pan until very hot, then add the steaks. Cook for 3-4 mins on each side until seared and cooked to your liking. Transfer to a plate, cover and keep warm.
  2. Toss together the lettuce, tomatoes and cucumber and divide between four serving bowls. Thickly slice each lamb steak and arrange on top of the salad. Top with the feta cheese. Whisk together the dressing ingredients and pour over the salad. Serve immediately.
