Ingredients
Peas or sweetcorn would go very well with this meal and help towards your five a day.
- 700g (1lb 9oz) frozen potato wedges
- 2 red onions, cut into wedges
- 15ml (1tbsp) sunflower oil
- 8 Cumberland pork sausages
- 15ml (1tbsp) fresh chopped parsley
- Mustard-flavour mayonnaise or soured cream, to serve (optional)
Method
- Preheat the oven to 220°C, 425°F, gas 7. Place the potato wedges in a large shallow roasting tin. Bake for 10 mins.
- Toss the onion wedges in the oil and add to the roasting tin with the sausages. Cook for a further 8-10 mins until the potato wedges are crisp and golden and the sausages are cooked through.
- Slice each sausage into 3 and serve with the potato wedges and onions on warmed plates. Season with salt and freshly ground black pepper, garnish with the chopped parsley and serve with mustard-flavour mayonnaise or soured cream, if liked.
