Ingredients

Peas or sweetcorn would go very well with this meal and help towards your five a day.

  • 700g (1lb 9oz) frozen potato wedges
  • 2 red onions, cut into wedges
  • 15ml (1tbsp) sunflower oil
  • 8 Cumberland pork sausages
  • 15ml (1tbsp) fresh chopped parsley
  • Mustard-flavour mayonnaise or soured cream, to serve (optional)

Method

  1. Preheat the oven to 220°C, 425°F, gas 7. Place the potato wedges in a large shallow roasting tin. Bake for 10 mins.
  2. Toss the onion wedges in the oil and add to the roasting tin with the sausages. Cook for a further 8-10 mins until the potato wedges are crisp and golden and the sausages are cooked through.
  3. Slice each sausage into 3 and serve with the potato wedges and onions on warmed plates. Season with salt and freshly ground black pepper, garnish with the chopped parsley and serve with mustard-flavour mayonnaise or soured cream, if liked.
