Juicy chunks of turkey breast and creamy avocados turn this salad into a super-filling, super-tasty meal

Ingredients

If you can't find - or don't fancy - pasta bows, any pasta shape will do for this dish. Try penne or fusilli.

  • 225g (8oz) dried pasta bows
  • 15ml (1tbsp) sunflower oil
  • 450g (1lb) turkey breast fillet, cut into chunks
  • 225g (8oz) cherry tomatoes, halved
  • 2 ripe avocados, peeled, stoned and thickly sliced
  • 150ml (¼ pt) ready-made French dressing
  • 30ml (2tbsp) fresh chopped parsley

Method

  1. Cook the pasta bows in a large pan of boiling, salted water according to the packet instructions until just tender.
  2. Meanwhile, heat the oil in a large frying pan and fry the turkey chunks for 7-8 mins until golden brown and cooked through. Add the cherry tomatoes for the last 1-2 mins of cooking time.
  3. Drain the pasta and toss into the turkey and tomatoes with the avocado slices and French dressing. Season to taste with salt and freshly ground black pepper and serve in warmed bowls garnished with the parsley and more ground black pepper.
