Macaroni cheese becomes the ultimate comfort food, pasta dish, with the addition of some crispy bacon and topped with tomatoes. Guaranteed to cheer you up!

Ingredients

Fresh four-cheese sauce should be available near the fresh pasta in your supermarket. If you can't find any, you could always make your own cheese sauce - or use a packet instead.

  • 6 rashers back bacon
  • 225g (8oz) macaroni
  • 2 x 300g cartons fresh four cheese pasta sauce
  • 60ml (4tbsp) milk
  • 3 plum tomatoes, thinly sliced
  • 30ml (2tbsp) freshly grated Parmesan cheese
  • Green salad, to serve

Method

  1. Preheat the grill to medium. Grill the bacon rashers for 3-4 mins until crispy. Cool slightly, then chop. Cook the macaroni in a pan of lightly salted boiling water for 10-12 mins, or according to the packet instructions. Drain well and transfer to a shallow ovenproof dish.
  2. A few minutes before the pasta is cooked place the cheese sauce and milk in a pan and heat through gently. Pour the sauce over the drained pasta and stir in the bacon. Top with the sliced tomatoes and sprinkle over the Parmesan cheese. Grill for 3-4 mins until bubbling and lightly browned. Serve immediately with a green salad.
