Tandoori pork steaks with coriander rice

Spice up your pork with this simple-but-delicious recipe - great for an evening treat or even a dinner party

Ingredients

When buying pork, look for cuts with a small amount of fat over the outside and with firm that's a greyish-pink colour. For best flavour and tenderness, meat should have a small amount of marbling.

  • 150g pot low-fat natural yogurt
  • 4tbsp tandoori curry paste
  • 1tbsp sunflower oil
  • 2tbsp lemon juice
  • 4 x 175g (6oz) pork leg or shoulder steaks
  • 250g (9oz) basmati rice
  • 4tbsp fresh chopped coriander
  • 1 red onion, thinly sliced
  • Lemon wedges and fresh coriander, to serve

Method

  1. Mix the yogurt, curry paste, oil and lemon juice in a shallow, non-metallic dish. Add the pork steaks and turn to coat in the marinade. Cover and leave to marinate for up to 1 hr.
  2. Preheat grill to medium. Place pork on a foil-lined grill pan. Grill for 6-7 mins each side until cooked through and lightly charred in places.
  3. Meanwhile, cook the rice in a pan of lightly salted boiling water for 10-12 mins, or according to packet instructions. Drain well and add the chopped coriander. Serve the chops on top of the rice, garnished with onion slices, lemon wedges and fresh coriander.
