This vegetarian variation on the Mexican classic is colourful and full of flavour, and will help towards your five-a-day

Ingredients

Vary your fajitas even more by adding guacamole or salsa: grated cheese would be a good addition, too.

  • 1tbsp sunflower oil
  • 1 red, 1 yellow, 1 green pepper, deseeded and sliced
  • 1 carrot, peeled and cut into matchsticks
  • 3 spring onions, thinly sliced
  • 1 garlic clove, peeled and crushed
  • 1-2tsp cajun seasoning
  • 6tbsp fresh tomato salsa
  • 4 wheat flour tortillas, warmed
  • Sliced red onions, to garnish
  • Salad and soured cream, to serve

Method

  1. Heat the oil in a large frying pan. Add the peppers and carrots, and fry for 5-6 mins until softened. Add the spring onions, garlic and Cajun seasoning and cook, stirring continuously, for 1 min adding a little water if necessary to prevent the mixture sticking.
  2. Spoon a little of the tomato salsa into the middle of each tortilla. Top with a quarter of the vegetables and then fold the tortilla over loosely. Garnish with red onions and serve with salad and soured cream.
