This recipe gives pizza a new twist - and because it's cooked in a non-stick frying pan, fat levels are kept as low as possible

Ingredients

This meal contains two out of the five portions of fruit and veg we should all be eating each day.

  • 2 medium Lion eggs
  • 85g (2½ oz) tomato
  • 25g (1oz) mushrooms
  • 25g (1oz) mozzarella
  • Pinch herbs
  • Green salad
  • 75g (2½ oz) cucumber
  • 15g (½ oz)spring onion
  • 30g (1oz) virtually fat-free dressing
  • 25g (1oz) spinach leaves
  • 80g (2½ oz) baguette/French stick

Method

  1. Break the eggs into the jug and beat with the fork.
  2. Pour in the eggs and quickly swirl around the frying pan. Pull the mixture away from sides, using the spatula, and tip to let the uncooked eggs slip underneath.
  3. When the top is nearly set, add the chopped tomatoes, sliced mushrooms and mozzarella. Sprinkle over the mixed herbs.
  4. Place the pan under a hot grill and grill until the cheese bubbles. Serve with green salad and French bread.
