Cut the fat out of your curry by ditching the meat and making it yourself at home - this one's ready in 40 minutes

Ingredients

  • 6 large Lion Quality eggs30ml/2 tbsp vegetable oil
  • 1 onion, chopped
  • 450g/1lb sweet potatoes, peeled and cubed
  • 1 garlic clove, crushed
  • 2.5cm/1in piece root ginger, grated
  • 225g/8oz green lentils
  • 60ml/4 tbsp medium curry paste
  • 1 (400g) can coconut milk
  • 1 vegetable stock cube
  • 350g/12oz young spinach leaves, rinsed
  • 3. Add the coconut milk, stock cube and 150ml/ 1/4 pt water. Bring to the boil, cover and simmer for 15-20mins or until the lentils and potatoes are tender. Stir in the spinach.

Method

  1. Put the eggs in a medium pan, cover with cold water and bring to the boil. Boil for 7mins, then drain, rinse in cold water tapping the shells all over. When cold, peel away the shells and cut into halves and set aside.
  2. Heat the oil in a large pan, add the onion and sweet potatoes and sauté for 5mins until golden. Add the garlic, ginger, lentils and curry paste and fry for 30 seconds.
  3. Add the coconut milk, stock cube and 150ml/ 1/4 pt water. Bring to the boil, cover and simmer for 15-20mins or until the lentils and potatoes are tender. Stir in the spinach.
  4. When the leaves have wilted, season to taste, then place the halved eggs on top of the curry, cover and cook for 2-3mins to heat through the eggs. Serve immediately with rice and naan bread.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

    You poor thing. Isn't it funny how we hope eating will help us lose weight? I think you should cut yourself some slack and just eat for health-I mean all the usual good advice things-and maybe not too much and don't worry about the weight; take good care of yourself in every way possible.The weight on its own isn't important. You matter more. Best of luck.

    I really like the weekly mails of good to know.It seems to have everything.The thing i would like to ask is ive been on medication for 7yrs now due to having breast cancer,no matter what i eat i cannot seem to loose weight and am getting quite desperate now.I have 2 physical jobs but the most i loose is 4lbs and then it goes back on.I was wondering if you have any suggestions as to what food i can eat to help with this problem.I cannot eat fish and it would have to be something quick and easy as i live alone and am too tired to cook when i come home.Thank you for taking the time to read my dilema and i hope you can help me
