Ingredients
If not heating the mash in a microwave then place it in the conventional oven for 30 mins before starting to cook the bacon and heat according to the instructions on the back of pack.
- 4 rashers British back bacon, de-rinded
- 1 x 300g pack Ready prepared mash
- 2 Spring onions, finely chopped
- Salt and freshly ground black pepper
- Topped with 1 or 2 poached or fried eggs
Method
- Place the bacon under a preheated grill for 2-3 mins each side or until crispy then roughly chop.
- Meanwhile heat the mash according to the instructions on the pack then add the chopped bacon and spring onions and season to taste.
- Serve with a poached egg or fried egg on top and a dollop of tomato ketchup.
