Delicious bacon and tangy spring onions make this perfect comfort food.

Ingredients

If not heating the mash in a microwave then place it in the conventional oven for 30 mins before starting to cook the bacon and heat according to the instructions on the back of pack.

  • 4 rashers British back bacon, de-rinded
  • 1 x 300g pack Ready prepared mash
  • 2 Spring onions, finely chopped
  • Salt and freshly ground black pepper
  • Topped with 1 or 2 poached or fried eggs

Method

  1. Place the bacon under a preheated grill for 2-3 mins each side or until crispy then roughly chop.
  2. Meanwhile heat the mash according to the instructions on the pack then add the chopped bacon and spring onions and season to taste.
  3. Serve with a poached egg or fried egg on top and a dollop of tomato ketchup.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.
