It doesn't have to be more sandwiches - this recipe offers a much tastier use for leftover turkey

Ingredients

Don't waste turkey! It's a great source of protein and has fewer calories and less fat and sodium per serving than beef, pork or lamb

  • 340g (12oz) cooked turkey
  • 28g (1oz) butter
  • 56g (2oz) finely diced onion
  • 56g 2oz finely diced aubergine
  • 56g 2oz finely diced courgettes
  • 2 tomatoes chopped
  • 1 clove crushed garlic
  • 2tbsp meat stock
  • 450g (1lb) instant mash (as per mix)
  • 1 egg
  • Salt and pepper

Method

  1. Finely chop or mince the turkey and put to one side.
  2. Melt butter, add onion and sweat off, do not colour.
  3. Add aubergine and fry then add garlic. Add courgettes, fry and add tomatoes, mix well together.
  4. Add turkey and stock. Bring to the boil and cook for 5 minutes, then season. Pour into a pie dish and leave to cool.
  5. Put potatoes on top and decorate with a palette knife. Brush with beaten eggs
  6. Put into the oven at 220°C (425°F, gas mark 7) for 15 mins.
