Spicy potato wedges

Fresh from the oven, these spicy wedges are totally irresistible

Ingredients

Serve with a cool mayonnaise or yogurt dip.

  • 28g (1oz) butter
  • 1tsp oil
  • 1 finely chopped onion
  • 1lb fresh potato wedges
  • 1 small red chilli
  • 1tsp turmeric
  • 2tsp ground coriander
  • 1tsp cumin seeds
  • Water

Method

  1. Melt the butter and oil in a large pan.
  2. Add the onions and sweat.
  3. Add deseeded, sliced chilli, coriander and cumin.
  4. Add potato wedges, toss well and fry for 2 mins.
  5. Add a splash of water and salt. Put in the oven for 10 mins at 180°C (350°F, gas mark 4).
  6. Take out, fry and make sure all the water has evaporated.
  7. Pour into serving dish, scatter with fresh coriander and serve.
