Fruit tiramisu

Tiramisu comes from the Italian for 'make me happy'. And this fruity version will certainly do that.

Ingredients
- 120ml (8tbsp) strong black coffee
- 30ml (2tbsp) coffee liqueur such as Tia Maria
- Approx 14 sponge fingers
- 450g (1lb) mascarpone cheese
- 75g (3oz) caster sugar
- 75ml (3fl oz) Marsala (Italian sweet wine)
- 300ml (1/2pt) double cream
- 50g (2oz) plain chocolate, grated
- 175g (6oz) strawberries, hulled and halved
- 175g (6oz) raspberries
Method
- Mix together the coffee and liqueur in a shallow dish. Dip half the sponge fingers in the mixture and place in the base of a large serving bowl.
- Beat together the mascarpone cheese and sugar until smooth, then gradually beat in the Marsala and double cream. Spread about one-third of the mixture over the sponge fingers and top with half the grated chocolate and nearly all the strawberries and raspberries. Reserve the rest of the fruit in the fridge for decoration.
- Dip the remaining sponge fingers in the coffee mixture and press down on top of the fruit. Spoon over the rest of the cream mixture and top with the remaining grated chocolate.
- Cover and chill for at least 3-4 hrs (or overnight). To serve, leave to stand at room temperature for about 30 mins, then decorate with the reserved fruit.
