Hoisin chicken with mushrooms and peppers

Ingredients

Shiitake mushrooms can be found in large supermarkets. They have a firm texture that's ideal for stir-fries, but you can also use brown cap or oyster mushrooms.

  • 275g (10oz) long-grain rice
  • 15ml (1tbsp) sunflower oil
  • 1 large onion, cut into chunks
  • 3 skinless chicken fillets, cutinto small chunks
  • 1 large red pepper, deseeded and cut into squares
  • 1 large yellow pepper, deseeded and cut into squares
  • 225g (8oz) shiitake mushrooms, wiped
  • 2 x 120g sachets hoisin and garlic stir-fry sauce

Method

  1. Bring a large pan of lightly salted water to the boil. Add the rice and cook for 8-10 mins until tender, or according to the packet instructions.
  2. Meanwhile, heat the oil in a large wok until almost smoking. Add the onion and chicken chunks, and stir-fry over a medium-high heat for 4-5 mins until the chicken is browned all over.
  3. Add the peppers and mushrooms and stir-fry for a further 2-3 mins. Stir in the sauce and cook for a further minute. Drain the rice and serve topped with the chicken and vegetables.
